My dear friend Jenny gave me a recipe for corn souffle a while ago. It’s her mother-in-law’s, I think, and it is way good. I’ve modified it a few times since then to work for events with more people and just a tweak of an ingredient and it is now my go to item to bring for pot lucks because it is always a hit. Thought I’d share it here in case any of you have pot lucks coming up and you are looking for something new to bring. Enjoy!
2 boxes of Jiffy Corn Muffin Mix
2 sticks of unsalted butter
2-3 tbsps of brown sugar, depending on sweetness you would like
16 oz of fat free sour cream
1 15 oz can of sweet corn drainer
1 15 oz can of sweet creamed corn
Melt butter. Add Jiffy Mix and sugar. Mix with a spoon. Add sour cream and corn. Bake in a 350 degree oven for 1 hour.
